2021 Next Red
Vineyard
The drought continued in 2021 with 24” of rain (average is ~36”). Early bloom in March and light fruit set in May were followed by a cool Spring and Summer. Lower yields and mild temperatures were ideal growing conditions for the grapes to develop intense flavors. Harvest began on September 16.
Cellar
Due to the large berry size of Malbec, we drained 15% of the juice off to intensify the overall color of the wine. Then we fermented the remaining juice with 100% of the skins. CO2 gas (a by-product of fermentation) bubbled up through the skins causing them to float to the top and form the “cap”. To ensure thorough extraction, we pumped juice from the bottom of the tank and sprinkled it over the cap several times a day throughout fermentation.
Following the Bordeaux tradition of extended maceration, the wine remained on the skins for another few weeks to soften its young tannins. Next, the wine was moved into our caves for barrel aging. During its first Winter, the wine underwent malolactic fermentation to lower its acidity and add richness. After many tastings in the Spring of 2023, we blended 15% Cabernet Sauvignon with 85% Malbec. We continued to barrel-age the wine until it was bottled in August 2023.
Drinkability
Young and fruit-driven, the 2021 Next Red opens with notes of bright berry fruits: raspberries, blackberries and blueberries that are enhanced with notes of juniper berries, violets, briars and cola spice. The liveliness of the Malbec is complemented by the elegant complexity of the Cabernet Sauvignon. Soft and chewy on the palate, it has notes of forest floor, coffee bean, Prosciutto, nutmeg and bittersweet chocolate that add richness and complexity to the wine. The 2021 has great potential; its balance and structure will ensure it ages well for at least an additional fifteen years beyond its vintage year.
